今日はKakuni (Braised Pork Belly)を作りました。

 

  

Kakuni(角煮) is pork belly cooked until tender in soy sauce based sweet sauce.
The pork used for Kakuni is the pork belly with plenty of fat.  
Sometimes I use shoulder roast.

Cook using a pressure cooker

around 600g Pork belly
Flour, as needed
100ml Water
2tbsp Sugar
2tbsp Soy sauce
2tbsp Sake
1 piece Ginger, sliced
Green onions, sliced(optional)

1,Cut the pork into cubes about 3cm and coat it with flour.
Cook the meat without adding oil until all sides are browned.

 

2,Transfer to a plate lined with paper towels to absorb excess fat.
Put the cooked pork in a pressure cooker or pot and pour enough water to cover the meat.
When it comes to a boil, reduce the heat and simmer for 5 minutes and then discard the liquid.

 

3,Place the pork in a pressure cooker, add water, sugar, soy sauce sake and ginger, and pressure cook for 20minutes. Let the pressure release naturally.

I prefer less fat. So, let the Kakuni cool and then put it in the refrigerator to remove the solidified fat. before serving warm it up gently.
